HACCP is designed to prevent,reduce or eliminate potential biological, chemical and physical food safety hazards, including those caused by cross-contamination. During the development of a HACCP system, potential hazards are identified<img decoding=\"async\" class=\"wp-image-949 alignright\" src=\"https:\/\/dev.tatangelos.com\/wp-content\/uploads\/2018\/09\/haccp.png\" alt=\"\" width=\"161\" height=\"155\" \/>\u00a0and control measures are implemented at specific points in the manufacturing process.<\/p>\n<p><strong>HACCP:<\/strong><\/p>\n<\/div>\n<ul>\n<li>Provides a more systematic approach to ensuring food safety than traditional inspection procedures<\/li>\n<li>Places more responsibility for ensuring food safety on the food manufacturer than traditional inspection programs<\/li>\n<li>Is based on science, rather than simply past experience or subjective judgement<\/li>\n<li>Focuses on preventing problems before they occur, rather than trying to detect failures through end-product testing.<\/li>\n<\/ul>\n<p><strong><span class=\"style6\">HACCP Inspects:<\/span><\/strong><\/p>\n<ul>\n<li>Fresh-cut produces<\/li>\n<li>Juice and nectary products<\/li>\n<li>Food outlets<\/li>\n<li>School food and services<\/li>\n<li>Meat and poultry products<\/li>\n<li>Fish and fishery products<\/li>\n<\/ul>\n<p class=\"style5\"><strong>7 HACCP Principles<\/strong><\/p>\n<p>Principle 1:\u00a0Conduct a hazard analysis.<br \/>\nPrinciple 2:\u00a0Identify critical control points.<br \/>\nPrinciple 3:\u00a0Establish critical limits for each critical control point.<br \/>\nPrinciple 4:\u00a0Establish critical control point monitoring requirements.<br \/>\nPrinciple 5:\u00a0Establish corrective actions.<br \/>\nPrinciple 6:\u00a0Establish record keeping procedures.<br \/>\nPrinciple 7:\u00a0Establish procedures for ensuring the HACCP system is working as intended.<\/p>\n<p>The seven HACCP principles are included in the international system ISO 22000. This standard is a complete food safety management system incorporating the elements of prerequisite programs for food safety, HACCP and quality management system which together form an organization\u2019s Total Quality Management.<\/p>\n<p><strong><span class=\"style6\">HACCP Implementation<\/span><\/strong><\/p>\n<p>HACCP implementation involves monitoring, verifying and validating of the daily work that is compliant with regulatory requirements in all stages all the time.
